The remaining of salt and water in the product:
- Dissected fish for exporting - under 20% salt, 25% water.
- Local dissected fish - under 20% salt, 30% water.
- Local Small Trash fish - salt 20-22%, 30% water.
Regular dryness, tight muscles, tough, smooth cut surface, scales do not peel, natural flavor, not rotten, natural color, light, not dirty or mark up or turn red, becoming rancid infamous, not salty sweet taste.
